So excited to introduce Fran to all of you, she’s sharing a yummy sounding recipe that is a great option for a freezer meal. Easy to make prior to baby comes, freeze and enjoy later instead of weeks of take out!

After having two kids I know that coming home from the hospital after giving birth, the last thing you want to do is cook! Its so important to take those first few days to relax, heal and just enjoy snuggling that new bundle of joy!
During the first few weeks at home my crockpot was my best friend. I had luckily used the last weeks before “The Big Day,” to prep a few meals, which was a huge help!
We were lucky to have many of our family and friends bring over meals the first few days home, but it was a huge help to have some backup meals on hand!
This is recipe is so easy, and freezes so well!
- 15 oz can of black beans
- 15 oz can of kidney beans
- 1 small can of corn
- 1 6oz can of tomato paste
- 2 1/2 Tbsp Chili powder
- 1 Tbsp of basil
- 1 Tbsp garlic powder
- 1 tsp onion powder
- 1 lb ground beef ( or whatever meat you would like)
- 1 Cup of water
- Put all of the ingredients into the crockpot, mix well and cook on high for 5 hours.
- I usually open it up every few hours just to mix everything up.
Once cooked, I usually serve it with shredded cheese or some sour cream!
It really doesn’t get easier than that!
Let any leftovers cool completely, then fill your choice size of freezer bag and lay flat in your freezer. I usually fill a few smaller sized bags for individual portions. It makes for a quick lunch, and way easier than thawing out a whole bag for one person! Chili should be used within 3 months.
When preparing from frozen: defrost and place in pot, then coo with on medium heat until heated through!
